Sweet Potato Skins with Chicken and Spinach



These baked sweet potato skins are topped with spinach, spiced chicken, and cilantro, with a dollop of Greek yogurt.

Total Time: 20 min.
Prep Time: 10 min.
Cooking Time: 10 min.
Yield: 4 servings

Ingredients:

 4 baked medium sweet potatoes, cut in half
1 tsp. olive oil
½ tsp. sea salt (or Himalayan salt)
4 oz shredded cooked chicken breast, boneless, skinless
1 tsp. all-natural taco seasoning, no salt added
1 cup steamed spinach
8 Tbsp. low-fat plain Greek yogurt
¼ cup chopped fresh cilantro

Preparation:

 1. Heat oven to 400° F.
2. Scoop flesh out of the sweet potatoes and reserve for another use.
3. Place skins on a baking sheet. Brush with oil and sprinkle with salt. Bake for 10 minutes, or until crisp.
4. While skins are baking, combine chicken and taco seasoning in a s mall bowl; mix well. Set aside.
5. Top each sweet potato half evenly with spinach, chicken mixture, yogurt, and cilantro.

Leaving A Legacy



Well I think my son gets the point, I workout almost daily.  He gets to take pictures and be in them when he "feels" like it!  But most important is the fact that he knows it's a daily routine and part of our lives.  He is a very active kid, helps around the farm without being asked.  He "loves doing yard work', his words.  He really enjoys helping his grandparents do things here as well, weeding, trimming, planting, and even poop patrol.  It is very important to teach your children to "help" you and others thus instilling in them a work ethic and respect for the things that they have. 

Too many kids these days feel entitled to things and do not want to or do not think they have to work for them.  My child will never be that kid!  He has chores at 4 years old and he understands it's a team effort.  I am not saying he loves doing them all the time but most days he is amazing at helping out.  Most of you who know us know he loves anything garbage, he even takes ours up our steep driveway and pulls them down. Most days he even wants to bring down the neighbors......UGH! 

My point is have your kids get involved in your workouts/fitness, teach them to be healthy and active, and give them daily chores (even if it takes twice as long to get them done), it will make the world a better place for us to leave behind!

No Bake Shakeo Cookies

 
 
Ingredients:
 
1 cup Vanilla or Chocolate Shakeology
1 cup all-natural peanut butter or almond butter
1 cup quick-cook rolled oats
1/2 cup raw honey
 
 
Directions:
 
Combined all ingredients in a medium mixing blow. Roll into 24 small balls 1-inch in size, flatten each to desired shape. Refrigerate for 30 minutes or freeze for later consumption or for on the go.

Lemon Raspberry Shakeolgy Smoothie


Ingredients:

1 cup water
1 tbsp fresh lemon juice
1/4 cup nonfat ricotta cheese
1 scoop Strawberry or Greenberry Shakeology
1/2 cup fresh or frozen raspberries
1 cup ice

Directions:

Place all ingredients in blender, blend until smooth or to taste.

Carnitas Tacos - Crock Pot Recipe





Ingredients(Pork):
  • 3 lbs of Pork Loin
  • 1 bay leaf
  • 1 1/2 cup of water


 Rub ingredients combine:
  • 2 tbsp of chili powder
  • 2 tsp of cumin
  • 1 tsp of ground coriander
  • 1/2 tsp cloves
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 1 tsp oregano


Cooking Pork - Directions:

Mix all spices together except the bay leaf in a bowl.
Rub down the entire pork loin with the spices and place in your slow cooker.
Add the bay leaf and water and cook on low for 6-8 hours.  Keep an eye on the pork just to make sure the water doesn't absorb and it dries out.  If you have to add more liquid please do.
Your pork should pull apart easily so you can shred it.

Once you it is able to be shredded take it from the crock pot, shred and then place back into the crock pot.  Stir the meat to coat with the juices.

You can fill a red container with this for the 21 day fix!

For the Carnitas you will need:

  • Corn Tortillas
  • Black or Pinto Beans in a can
  • Romain Lettuce
  • Diced Tomatoes
  • Diced Avocado
  • Shredded cheddar cheese


Cilantro Lime Topping (Do not omit this, it is what makes the whole thing just amazing)

  • Greek yogurt
  • 1/4 Cup Fresh Lime Juice
  • 1/4 Cup Fresh Cilantro Chopped
  • 1 lime cut into wedges for garnish


Combine these ingredients in a bowl for the dressing and set aside.

Add the drained beans with 1/2 of a cup of water to a pot on the stove over medium heat. Cook until heated through.  Gently mash with a fork until they reach your desired consistency.

Lightly spray your corn tortillas with cooking spray and place on a foil lined baking sheet.
Crisp in the oven on 350 degrees for 8-10 minutes until desired crispiness.
