Ground Turkey Scramble
Ingredients:
2 egg whites
2-3 oz lean ground turkey
1/4 cup red bell pepper
1 oz baby spinach
1/2 a large zucchini sliced very thin
Pinch of Himalayan pink sea salt, pepper, garlic powder, and mustard powder
Directions:
Brown turkey
Sauté zucchini in all natural butter until tender
Add bell pepper
Add your egg whites
Last add spinach, cook until barely wilted
Season to taste
These are breakfast portions, feel free to increase for lunch or dinner prep.

Sweet Potatoes Stuffed with Black Beans and Spinach

Ingredients
- 4 large sweet potatoes
- 1 tbsp. olive oil
- 1 clove garlic
- 1 can black beans
- 0.50 tsp. ground cumin
- 0.13 tsp. cayenne pepper
- 1 bunch spinach
- kosher salt
- Pepper
- 1 large lime
- 6 oz. nonfat Greek yogurt
- scallions
Directions
- Pierce the potatoes all over with a fork, place on a microwave-safe plate and microwave on high, turning over halfway through, until just tender, 16 to 18 minutes.
- Ten minutes before the potatoes are finished, heat the oil and garlic in a large skillet over medium heat. Add the beans, cumin, cayenne, and 2 tablespoons water, increase the heat to medium-high and cook, tossing, until the beans are heated through, about 2 minutes. Add the spinach, season with 1/4 teaspoon salt and cook, tossing until beginning to wilt, 1 to 2 minutes; remove from heat.
- Split the potatoes and season with 1/4 teaspoon each salt and pepper. Squeeze a lime wedge over each potato, then top with the bean mixture. Serve with a dollop of yogurt, sliced scallions, and extra lime wedges, if desired.

Quick & Easy Oven Roasted Chicken
Ingredients:
Whole chicken
Himalayan sea salt
Pepper
Garlic powder
Cajun Spice (optional)
Celery
Onion
Directions:
Preheat oven to 450
Rinse whole chicken, pat dry
Fill cavity with chopped celery, onion, and seasoning
Place 1 tablespoon chopped butter and sprinkle with seasonings
Bake for 1 hour or 165 internal temp and let cool for 10 minutes
